Potato and Celery Root "Puree" Recipe

These are traditional mashed potatoes with a twist. It's taken from Sally Fallon's Nourishing Traditions.

Potato and Celery Root Puree

Serves 8-10

Ingredients
6 potatoes, peeled
3 celery roots, peeled and cut up
2 cloves garlic, peeled and mashed
pinch nutmeg
1/2 cup butter
1/2 to 1 cup piima cream or creme fraiche

Directions
  1. Boil the celery root pieces in water for about 30 minutes or until very tender
  2. Boil potatoes in water until tender
  3. Combine potatoes and celery root in a large pot
  4. Add garlic, nutmeg, butter and cream
  5. Mash ingredients with a handheld potatoes masher or...
  6. Puree the ingredients with a hand blender for a really smooth texture, optional
